I've been seeing more and more articles lately predicting that edible insects are going to become increasingly common in Western cuisine. It makes sense from a sustainability outlook – insect farming uses significantly fewer resources than traditional livestock.But I'm curious what others think. Are we actually ready to start incorporating insects into our diets regularly? I've seen some cricket flour protein bars at my local grocery store, and I've heard of a few restaurants experimenting with mealworm tacos. it feels a little niche still, and I wonder what it will take for the average person to overcome the "ick" factor. Is it going to be purely about the environmental benefits, or will chefs need to really showcase the culinary potential of insects and make them genuinely flavorful and appealing? Maybe processed insect protein will become common first, incorporated into familiar foods to ease the transition.
