Someone might sun-dry their own peppers or hand-grind everything with a mortar and pestle.

Modern blending, on the other hand, feels much more scientific. We have access to precise measurements, controlled environments, and a vast array of spices from all over the world at our fingertips. Think laboratory grade dehydrators and industrial-strength grinders. It allows for consistent replication and the ability to create blends that are incredibly complex and nuanced in entirely new ways.
